  • 1 cup panko breadcrumbs

  • ¾ cup unsweetened plant-based milk (almond or oat milk)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray
  • ¼ cup tahini
  • ½ cup fresh parsley leaves
  • ¼ cup fresh cilantro leaves
  • 1 small garlic clove
  • 2 tbsp fresh lemon juice
  • 23 tbsp water (to thin sauce as needed)
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Wash and dry the cauliflower head thoroughly. Cut into evenly sized florets about 1 to 1.5 inches each.
  2. In a medium bowl, whisk together flour, garlic powder, smoked paprika, salt, and pepper. Slowly add plant-based milk, whisking until smooth and slightly thickened.
  3. Place panko breadcrumbs in a shallow dish. Optionally, toast lightly in a dry pan for 2 minutes.
  4. Dip each cauliflower floret into the batter, letting excess drip off, then coat fully in panko. Arrange on a baking sheet and let rest for about 10 minutes.
  5. Preheat air fryer to 400°F. Spray cauliflower bites lightly with olive oil spray. Place in a single layer in the basket and air fry for 12-15 minutes, shaking halfway through, until golden brown and crispy.
  6. While bites cook, combine tahini, parsley, cilantro, garlic, lemon juice, olive oil, and salt in a food processor or blender. Pulse until smooth, adding water tablespoon by tablespoon to reach desired consistency.
  7. Serve the crispy cauliflower bites warm with the green goddess tahini sauce drizzled or on the side. Garnish with fresh herbs if desired.

Pat cauliflower dry before battering to ensure crispiness. Use panko breadcrumbs for best crunch. Light olive oil spray helps achieve golden crisp without deep frying. Shake air fryer basket halfway through cooking for even browning. Do not overcrowd the basket. Batter consistency can be adjusted with more milk or flour as needed.
