  • 1 teaspoon lemon juice
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. In a large bowl, whisk together 2 cups (240 g) of all-purpose flour, 2 tablespoons sugar, and 1/2 teaspoon salt.
  2. Add 1/2 cup (113 g) cold, cubed unsalted butter. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits.
  3. Gradually add 5 to 7 tablespoons of ice water, mixing gently with a fork until the dough just comes together. Form the dough into a disk, wrap in plastic, and chill for at least 30 minutes.
  4. While the dough chills, combine 2 cups chopped fresh rhubarb, 1/2 cup packed brown sugar, 1 teaspoon ground cinnamon, 1 tablespoon cornstarch, and 1 teaspoon lemon juice in a bowl. Stir gently to coat the rhubarb evenly. Set aside.
  5. On a lightly floured surface, roll the chilled dough to about 1/8 inch (3 mm) thickness. Using a 4-inch (10 cm) round cutter or a glass, cut out circles.
  6. Spoon about 1 to 1.5 tablespoons of the rhubarb filling onto the center of each dough circle. Do not overfill.
  7. Brush the edges with a little water or beaten egg to help seal. Fold the dough over to form a half-moon shape. Press edges firmly with a fork to crimp.
  8. Place the hand pies on a parchment-lined plate or tray. Brush the tops with beaten egg and sprinkle coarse sugar if desired.
  9. Preheat air fryer to 350ยฐF (175ยฐC) for 3-5 minutes.
  10. Place 3-4 hand pies in the air fryer basket without overcrowding. Cook for 10-12 minutes, flipping halfway through for even browning, until golden and crispy.
  11. Let pies cool for a few minutes before serving so the filling thickens slightly. Enjoy warm or at room temperature.
