Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease an 8 or 9-inch springform pan and line the bottom with parchment paper.
  2. Melt the chopped dark chocolate and butter in a heatproof bowl over simmering water (double boiler), stirring gently until smooth and glossy, about 5 minutes. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together the eggs and sugar using an electric mixer on high speed until pale, thick, and fluffy, about 5-7 minutes, forming ribbons when the whisk is lifted.
  4. Slowly fold the melted chocolate and butter mixture into the egg mixture using a rubber spatula, folding gently to retain air.
  5. Sift the almond meal over the batter, then add orange zest, orange juice, vanilla extract, and salt. Fold everything together carefully until just combined; the batter should be thick, smooth, and glossy.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes until the cake has a thin, slightly cracked crust and a soft center that springs back gently to the touch. Avoid overbaking to keep the center fudgy.
