  • 1 ¾ cups (220 grams) all-purpose flour
  • ½ cup (120 ml) full-fat sour cream
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (50 grams) packed brown sugar
  • 2 large eggs, room temperature
  • ½ cup (115 grams) unsalted butter, melted and slightly cooled
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • Optional: ½ cup chopped walnuts or pecans, toasted
  • Optional: ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Mash the bananas in a large mixing bowl until smooth with a few small lumps.
  3. Add sour cream, melted butter, granulated sugar, and brown sugar to the mashed bananas. Stir gently until combined.
  4. Beat in the eggs and vanilla extract until the batter is smooth and creamy.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Gently fold the dry ingredients into the wet mixture in batches, mixing just until no flour streaks remain.
  7. If using, fold in nuts or chocolate chips with gentle stirs.
  8. Pour the batter into the prepared loaf pan and smooth the top evenly.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking at 55 minutes.
  10. Remove from oven and let cool in the pan for about 10 minutes before transferring to a cooling rack.
  11. Cool completely before slicing for best texture.
