A cozy and indulgent French toast bake made with day-old croissants soaked overnight in a rich custard, topped with a fresh and bubbly strawberry champagne glaze. Perfect for brunches and special occasions.

Ingredients

Scale
  • Day-old croissants, torn into large pieces
  • 2 cups whole milk (480 ml)
  • 1 cup heavy cream (240 ml)
  • 6 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ½ cup granulated sugar (100 grams)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup fresh strawberries, hulled and chopped
  • 1 cup powdered sugar (120 grams)
  • ¼ cup champagne or sparkling wine (60 ml)
  • 1 tablespoon lemon juice
  • Optional: pinch of salt for glaze

Instructions

  1. Tear the croissants into large, bite-sized pieces and place them evenly in a 9×13-inch baking dish. (5 minutes)
  2. In a large mixing bowl, whisk together whole milk, heavy cream, eggs, vanilla extract, granulated sugar, cinnamon, and salt until smooth. (3 minutes)
  3. Pour the custard mixture evenly over the croissant pieces. Gently press the croissants down to soak up the custard without making them mushy. (2 minutes)
  4. Cover the baking dish tightly with plastic wrap or a lid and refrigerate overnight or at least 6 hours.
  5. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-55 minutes until custard is set and top is golden brown and slightly crisp.
  6. While baking, combine chopped strawberries, powdered sugar, champagne, and lemon juice in a blender or food processor. Blend until smooth or desired texture. Add a pinch of salt if needed. (5 minutes)
  7. Let the bake cool for 10 minutes after baking. Drizzle the strawberry champagne glaze generously over the top before serving. (10 minutes)

Notes

Use day-old croissants for best texture; fresh croissants get soggy. Room temperature eggs and dairy help custard bake evenly. Cover with foil if top browns too quickly. Adjust glaze sweetness to taste and add a splash of champagne to loosen if thickened. For dairy-free or vegan options, substitute ingredients as suggested in variations.
