  • ยฝ cup fresh raspberries (75 g)
  • ยฝ cup fresh blackberries (75 g)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease a 9 or 10-inch round pizza pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. Press the dough evenly into the prepared pan to form a smooth, round crust.
  7. Bake for 15-18 minutes or until edges are lightly golden. Remove and cool completely on a wire rack, about 30-40 minutes.
  8. In a medium bowl, beat softened cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar, vanilla extract, and lemon juice. Beat until fluffy and spreadable.
  10. Spread the cream cheese frosting evenly over the cooled crust.
  11. Arrange sliced strawberries, blueberries, kiwi, raspberries, and blackberries artistically on top of the frosting.
  12. Optionally, sprinkle powdered sugar and garnish with fresh mint leaves.
  13. Slice into wedges and serve immediately or chill for up to 2 hours before serving.
