A light and refreshing vegan salad combining juicy watermelon, creamy vegan feta-style cheese, and a zingy mint lime dressing. Perfect for summer, this salad is quick to prepare and full of vibrant flavors.

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup vegan feta-style cheese, crumbled (e.g., Violife or homemade tofu feta)
  • 1/4 cup fresh mint leaves, finely chopped
  • Juice of 2 medium limes (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon maple syrup or agave nectar
  • 1/4 teaspoon sea salt, or to taste
  • Pinch of freshly ground black pepper (optional)
  • 1/2 cup cucumber, diced (optional)
  • 1/4 cup red onion, thinly sliced (optional)

Instructions

  1. Cut about 4 cups of seedless watermelon into 1-inch bite-sized cubes and place in a large mixing bowl.
  2. If using, dice the cucumber into small cubes and thinly slice the red onion; add to the watermelon bowl.
  3. Finely chop 1/4 cup fresh mint leaves and toss into the bowl with the watermelon and veggies.
  4. In a small bowl or jar, combine 2 tablespoons extra virgin olive oil, juice from 2 medium limes, 1 teaspoon maple syrup or agave, 1/4 teaspoon sea salt, and a pinch of black pepper. Whisk or shake vigorously until emulsified.
  5. Pour the mint lime dressing over the watermelon mixture and gently toss to coat all pieces without smashing the watermelon. Adjust salt or lime juice to taste.
  6. Crumble 1 cup of vegan feta-style cheese over the salad and gently toss once more to combine.
  7. Chill the salad in the refrigerator for 10-15 minutes before serving to meld flavors, but serve fresh to avoid watery texture.

Notes

Use a ripe, fragrant watermelon for best sweetness. Chop mint finely to avoid overpowering the salad. Prepare salad close to serving time to prevent watermelon from becoming watery. If needed, drain excess liquid or pat watermelon cubes dry. Dressing emulsifies best when shaken in a jar. For make-ahead, keep dressing and vegan feta separate until serving.
