  • 1/2 cup buttermilk (120ml) or milk + 1 teaspoon lemon juice
  • Cream Cheese Frosting:
  • 8 ounces cream cheese (226g), softened
  • 1/2 cup unsalted butter (113g), softened
  • 3 cups powdered sugar (360g), sifted
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a 9×13-inch sheet pan. Line with parchment paper if desired.
  2. In a large bowl, whisk together almond flour, baking powder, baking soda, and salt until evenly combined.
  3. In a separate large bowl, use an electric mixer to beat softened butter and sugar until light and fluffy, about 3 to 4 minutes.
  4. Beat in eggs one at a time, ensuring each is fully incorporated. Stir in vanilla and almond extracts.
  5. Slowly add the almond flour mixture alternately with buttermilk, beginning and ending with dry ingredients. Mix gently with a spatula until just combined.
  6. Pour batter into prepared sheet pan and smooth the top evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean and the top is golden brown.
  8. Let the cake cool completely on a wire rack before frosting.
  9. For the frosting, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla extract, and salt, beating until creamy and fluffy.
  10. Spread the cream cheese frosting evenly over the cooled cake. Chill for 15 minutes before slicing for a neat finish.
