A simple, fresh, and dairy-free mocktail that combines fresh mint, coconut water, lime juice, and a touch of sweetness for a crisp, cooling summer drink.

Ingredients

Scale
  • 1012 fresh mint leaves
  • 1 cup (240 ml) natural, unsweetened coconut water
  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons (30 ml) simple syrup (homemade or store-bought)
  • 3/4 cup (180 ml) crushed ice
  • Mint sprigs for garnish
  • Optional: a dash of orange bitters
  • Optional: agave syrup or maple syrup as alternative sweeteners

Instructions

  1. Place 10-12 fresh mint leaves in your glass. Use a muddler or the back of a spoon to gently press the leaves for about 15 seconds to release oils without shredding.
  2. Pour in 2 tablespoons (30 ml) of simple syrup. Adjust sweetness by starting with 1 tablespoon if preferred.
  3. Add 2 tablespoons (30 ml) of freshly squeezed lime juice and stir gently to combine with the mint and syrup.
  4. Fill the glass about 3/4 full with crushed ice (approximately 3/4 cup or 180 ml).
  5. Slowly pour 1 cup (240 ml) of chilled coconut water over the ice and mint mixture. Stir gently to mix without bruising the mint.
  6. Garnish with fresh mint sprigs and serve immediately.

Notes

Use fresh mint leaves for best flavor; avoid over-muddling to prevent bitterness. Chill the glass beforehand for a colder drink. Adjust sweetness and lime juice to taste. Crushed ice is essential for texture and chill. Optional additions include orange bitters or alternative sweeteners like agave or maple syrup. Prepare simple syrup ahead and store refrigerated for up to a week.
