  • 1 cup (240 ml) heavy cream
  • 1 can (14 oz or 395 g) sweetened condensed milk
  • ½ cup (50 g) unsweetened cocoa powder, preferably Dutch-processed
  • 4 oz (115 g) dark chocolate (60-70% cacao), finely chopped
  • 2 teaspoons (10 ml) vanilla extract
  • 2 whole cinnamon sticks
  • 2 whole star anise pods
  • 4–5 whole cloves
  • 1 small dried chile de árbol, stem removed (optional)
  • Pinch of salt

Instructions

  1. Combine the milk and cream: Pour 4 cups (960 ml) of whole milk and 1 cup (240 ml) of heavy cream into your slow cooker. Whisk them together gently.
  2. Add the sweetened condensed milk: Open the can and scrape every last bit into the slow cooker. Whisk until fully incorporated into the dairy mixture.
  3. Sift in the cocoa powder: Measure ½ cup (50 g) of unsweetened cocoa powder and sift it directly into the slow cooker through a fine-mesh strainer. Whisk vigorously until no dry streaks remain.
  4. Add the chopped dark chocolate: Toss in the 4 oz (115 g) of finely chopped dark chocolate. Don’t stir yet—just let it sit on top.
  5. Add the whole spices: Drop in 2 cinnamon sticks, 2 star anise pods, 4-5 whole cloves, and the dried chile de árbol (if using). Sprinkle in a generous pinch of salt. Give everything one more gentle stir.
  6. Cook on low for 2-3 hours: Cover the slow cooker and set it to low. After about 2 hours, give it a stir—the chocolate should be fully melted and the liquid should be steaming, not bubbling.
  7. Stir in the vanilla: After 2.5 hours, remove the lid and add 2 teaspoons (10 ml) of vanilla extract. Stir well. If it looks thin, let it cook another 30 minutes uncovered to reduce slightly.
  8. Strain before serving: Ladle the hot chocolate through a fine-mesh strainer into a large pitcher or directly into mugs to catch the whole spices.
  9. Serve immediately: Pour into mugs and top with whipped cream, a cinnamon stick, or marshmallows as desired.

Notes

Temperature control is everything—cook on low, not high, to avoid scorching. Use whole spices, not ground, to prevent a gritty texture. Taste halfway through and adjust spices or salt as needed. Remove spices after 2.5 hours to prevent oversteeping. Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months.
