  • 1/2 cup chickpea flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup water (plus more if needed)
  • 1 tablespoon olive oil
  • 1/3 cup hot sauce (recommended: Frank’s RedHot Original)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon garlic powder (for sauce)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder (for ranch)
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the cauliflower and cut into bite-sized florets (about 1.5 to 2 inches). Pat them dry with a clean towel or paper towels.
  3. In a medium bowl, whisk together chickpea flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Add water and olive oil, whisk until smooth (batter should be thick but pourable).
  4. Add cauliflower florets to the batter and toss until evenly coated. Let sit for 2-3 minutes.
  5. Using a fork or fingers, lift each battered floret, letting excess batter drip off, and place on the prepared baking sheet, leaving space between each.
  6. Bake for 20 minutes, flipping each floret after 10 minutes for even browning.
  7. While cauliflower bakes, make the buffalo sauce: combine hot sauce, melted butter, honey (if using), and 1/2 teaspoon garlic powder in a small bowl. Whisk until smooth.
  8. Make the ranch dip: in another small bowl, combine Greek yogurt, mayonnaise, lemon juice, dried dill, dried parsley, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and salt and pepper to taste. Stir until well combined. Cover and refrigerate until ready to serve.
  9. Once cauliflower is done baking, transfer hot florets to a large bowl and pour buffalo sauce over them. Gently toss with a spatula until evenly coated.
  10. Return sauced cauliflower to the baking sheet in a single layer. Bake for another 5-7 minutes until the sauce sets and edges get crispier.
  11. Serve immediately with ranch dip on the side.

Don’t skip the second bake—it keeps the coating from getting soggy. Dry cauliflower thoroughly before battering to ensure crispiness. For best results, serve immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, but texture is best fresh. Reheat in an air fryer at 350°F for 3-4 minutes.
