  • 14 oz package little smoked sausages, drained
  • 1 lb thin-cut bacon, cut into thirds
  • 1/2 cup brown sugar, packed
  • 2 tablespoons bourbon
  • 2430 wooden toothpicks, soaked in water for 10 minutes

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil or parchment paper. Place a wire rack on top if available.
  2. Soak 24-30 wooden toothpicks in a small bowl of water for at least 10 minutes to prevent burning.
  3. In a small bowl, combine 1/2 cup packed brown sugar and 2 tablespoons bourbon. Stir until it forms a thick, grainy paste.
  4. Cut 1 lb thin-cut bacon into thirds crosswise, each piece about 2-3 inches long.
  5. Wrap one piece of bacon around each little smoked sausage, overlapping slightly. Secure with a soaked toothpick pushed through the overlapping ends. Place on the wire rack or prepared baking sheet. Repeat for all sausages (about 24-30).
  6. Brush each bacon-wrapped smokie generously with the brown sugar bourbon mixture, using all of it.
  7. Bake for 25-30 minutes, or until bacon is crispy and brown sugar is bubbling and caramelized. If not using a wire rack, flip halfway through at 12-15 minutes.
  8. Check for doneness at 22 minutes to avoid burning. Bacon should be dark golden brown and slightly crispy.
  9. Remove from oven and let rest on the pan for 5 minutes to allow the glaze to set.
  10. Transfer to a serving platter. Remove toothpicks if desired, or leave them in for easy grabbing. Serve warm.
