  • 1 package (17.3 ounces) puff pastry sheets, thawed but still cold
  • 8 ounces brie cheese, cold
  • ½ cup cranberry sauce (whole berry or jellied)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large egg, beaten with 1 tablespoon water
  • ½ teaspoon flaky sea salt (like Maldon)
  • 2 tablespoons honey (optional, for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Pop your brie wheel in the freezer for about 10 minutes. Once firmed up, cut the brie into 24 small cubes, about ½ inch each.
  3. On a lightly floured surface, gently unfold one sheet of puff pastry. Cut the sheet into 12 equal squares. Repeat with the second sheet. You should have 24 squares total.
  4. Gently press each pastry square into the cups of a mini muffin tin. If you don’t have a mini muffin tin, place them directly on the parchment-lined baking sheet and fold up the edges slightly to create a little cup shape.
  5. Place one cube of cold brie into each pastry cup.
  6. Spoon about 1 teaspoon of cranberry sauce on top of each brie cube.
  7. Pinch a tiny bit of chopped rosemary over each bite.
  8. Using a pastry brush, lightly brush the exposed edges of each pastry square with the beaten egg.
  9. Sprinkle a tiny pinch of flaky sea salt on each bite.
  10. Bake for 14 to 16 minutes, until the pastry is puffed up and deeply golden brown. Rotate the pans halfway through if your oven has hot spots.
  11. Let the bites rest in the pan for about 5 minutes. Use a small offset spatula or butter knife to gently transfer them to a serving platter.

Notes

Freeze the brie for about 10 minutes before cutting for cleaner slices. Keep puff pastry cold while working. Don’t overfill the cups. Use a mini muffin tin for best results. Watch the oven closely to avoid overbaking. For best texture, let bites rest 5 minutes before serving.
