Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. Carefully cut each acorn squash in half from stem to tip. Scoop out the seeds and stringy pulp with a spoon.
  3. Slice each half into 1-inch thick wedges (about 4-5 wedges per half).
  4. In a large mixing bowl, toss the squash wedges with olive oil, salt, and pepper. Use your hands to coat all cut surfaces.
  5. Spread the wedges in a single layer on a prepared baking sheet, making sure they are not touching.
  6. Roast the squash for 20 minutes without any glaze.
  7. While the squash is roasting, combine butter, maple syrup, vanilla extract, cinnamon, nutmeg, and cloves in a small saucepan. Heat over medium-low heat, stirring occasionally, until the butter is melted and the mixture is smooth and bubbly (about 3-4 minutes). Remove from heat.
  8. After the first 20 minutes of roasting, remove the baking sheet from the oven. Brush the maple butter mixture generously over all cut surfaces of the squash wedges. Flip the wedges and brush the other side. Pour any remaining glaze over the top.
  9. Return the baking sheet to the oven and roast for another 15-20 minutes, until the squash is fork-tender and the edges are caramelized and golden-brown. For extra caramelization, broil for the last 2 minutes, watching carefully.
