  • 10 cups water (for baking soda bath)
  • ⅔ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt, for sprinkling
  • 2 tablespoons unsalted butter (for beer cheese dip)
  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • 1 cup whole milk
  • ½ cup beer (pale lager or pilsner)
  • 2 cups sharp cheddar cheese, freshly grated
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, brown sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 2 cups of flour, one cup at a time. The dough should be soft and slightly sticky.
  3. Knead the dough: Turn onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Form into a ball.
  4. First rise: Place dough in a lightly greased bowl, cover with a towel, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Preheat and prepare: Preheat oven to 425°F. Line a baking sheet with parchment paper. Bring 10 cups of water to a boil in a large pot, then carefully add baking soda (it will bubble vigorously).
  6. Shape the bites: Punch down dough and divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces.
  7. Second rest: Place cut pieces on the prepared baking sheet, cover loosely, and let rest for 20 minutes.
  8. Baking soda bath: Reduce boiling water to a gentle simmer. Using a slotted spoon, lower 5-6 pretzel bites into the water at a time. Boil for 30 seconds, flip, and boil another 30 seconds. Remove and place back on baking sheet. Repeat with all bites.
  9. Egg wash and salt: Brush each pretzel bite with beaten egg wash. Sprinkle generously with coarse sea salt.
  10. Bake: Bake for 10-12 minutes until deep golden brown, rotating the sheet halfway through.
  11. Make the beer cheese dip: While pretzels bake, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in milk and beer, whisking continuously until smooth. Cook for 2-3 minutes until thickened. Reduce heat to low, add cheddar cheese a handful at a time, stirring until melted. Stir in Dijon mustard, Worcestershire sauce, and smoked paprika. Season with salt and pepper to taste. Keep warm.
