  • 4 large ripe avocados
  • Juice of 2 limes (about 3 tablespoons)
  • Salt to taste (about ยฝ teaspoon fine sea salt)
  • 1 small red onion, finely diced (about ยฝ cup)
  • 2 Roma tomatoes, seeded and finely diced (about ยพ cup)
  • 1 jalapeรฑo, seeded and minced (about 2 tablespoons)
  • ยผ cup fresh cilantro, finely chopped
  • 1 clove garlic, minced
  • ยฝ teaspoon ground cumin
  • Pinch of cayenne pepper (optional)
  • 8 thin pretzel sticks, broken in half (16 pieces)
  • 16 black olive slices
  • 1 small red bell pepper, cut into small rectangles (about 16 pieces)
  • 8 small pretzel twists or black olive slices for eyes
  • Sour cream (for pupils, optional)

Instructions

  1. Cut each avocado in half lengthwise around the pit. Twist to separate, remove the pit, and carefully scoop out the avocado flesh, leaving about ยผ inch of flesh attached to the skin. Place hollowed-out skins on a serving platter.
  2. In a mixing bowl, add the scooped-out avocado flesh. Immediately squeeze lime juice over it and add salt. Mash with a fork or potato masher until about 80% smooth with some small chunks remaining.
  3. Fold in diced red onion, tomatoes, jalapeรฑo, cilantro, garlic, cumin, and cayenne (if using). Mix gently until evenly distributed. Taste and adjust seasoning as needed.
  4. Cover the bowl with plastic wrap pressed directly against the surface of the guacamole. Refrigerate for at least 30 minutes.
  5. While the filling chills, prepare decorations: break pretzel sticks in half, cut red bell pepper into small rectangles (about ยฝ inch by ยผ inch), and slice black olives if not pre-sliced. Lay everything out on a plate for easy assembly.
  6. Spoon the chilled guacamole into a piping bag or quart-sized zip-top bag. If using a zip-top bag, squeeze filling into one corner and snip off about ยฝ inch of the corner.
  7. Hold the piping bag at a 45-degree angle over a hollowed avocado skin. Squeeze gently, filling from the bottom up, mounding slightly above the edge. Repeat with all eight avocado halves.
  8. For each avocado half, place two pretzel stick halves on either side of the ‘neck’ area (narrower end). Press an olive slice onto the end of each pretzel stick for bolts. Place a red bell pepper rectangle horizontally below the center for the mouth. Add two round olive slices above the mouth for eyes, with a tiny dot of sour cream or white onion in the center for pupils. Optionally, add a small piece of green onion or chive across the top for stitches.
  9. Serve immediately or refrigerate. Best served within 2 hours of assembly. If making ahead, assemble everything except decorations, cover tightly with plastic wrap, and refrigerate. Add decorations just before serving.

Notes

Avocado selection is crucial: choose avocados that are ripe but still firm enough to hold their shape. Don’t skip the chilling stepโ€”cold guacamole pipes more cleanly. Use a wet finger to smooth the filling if needed. Prep all decorations before piping for easier assembly. For a fully gluten-free version, skip the pretzel sticks or use cucumber sticks instead.
