  • 1 cup vodka (8 ounces)
  • 3 cups ginger beer (24 ounces)
  • Ice (about 3 cups large cubes)
  • Optional: club soda, honey or agave, jalapeño slices

Instructions

  1. Prepare the watermelon juice: Cube seedless watermelon into 1-inch chunks (about 4 cups). Blend in a blender until completely smooth, about 30-60 seconds. Pour through a fine-mesh strainer set over a bowl, pressing with a spatula to extract about 2 cups of juice. Discard pulp. Chill juice in fridge while prepping other ingredients.
  2. Muddle the mint and lime: In a large pitcher, add fresh mint leaves and lime juice. Use a muddler or the back of a wooden spoon to gently press mint into lime juice about 5-6 times until fragrant. Do not over-muddle or mint will become bitter.
  3. Combine base ingredients: Pour chilled watermelon juice and vodka into the pitcher with muddled mint and lime. Stir gently to combine. Taste and adjust with more lime if needed.
  4. Add ginger beer: Slowly pour ginger beer into the pitcher. Stir gently to avoid knocking out carbonation.
  5. Fill with ice and garnish: Add plenty of ice (about 3 cups large cubes) to the pitcher. Stir once more. Garnish with fresh mint sprigs, thin watermelon wedges, or lime wheels. Serve immediately in copper mugs or glasses filled with ice.

Notes

For make-ahead: Prepare watermelon juice and muddle mint-lime mixture up to 24 hours in advance. Store covered in fridge. Add vodka and ginger beer just before serving. For a non-alcoholic version, omit vodka and increase ginger beer to 4 cups with extra lime and club soda. Watermelon sweetness varies—taste juice before mixing and adjust with honey or agave if needed. Use large ice cubes to prevent dilution.
