This gooey s’mores skillet dip with grilled brioche is a quick and easy dessert that brings the campfire classic indoors. Made with chocolate chips, marshmallows, and buttery grilled brioche, it’s perfect for any occasion and ready in under 20 minutes.

  • 1 large loaf or 46 thick slices brioche bread
  • 1 cup (175g) semi-sweet chocolate chips
  • ½ cup (90g) milk chocolate chips
  • 2 cups (about 100g) miniature marshmallows
  • 3 tablespoons (42g) unsalted butter, melted, plus more for grilling
  • Flaky sea salt (a pinch, optional but highly recommended)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the brioche into thick slices, about 1-inch thick. Optionally cut into finger-sized strips.
  3. Melt the 3 tablespoons of unsalted butter in a small saucepan over low heat or in a microwave-safe bowl in 15-second bursts.
  4. Heat a griddle pan or large skillet over medium-high heat. Brush one side of each brioche slice with melted butter. Place buttered-side down on the hot griddle and cook for 1-2 minutes until golden brown. Brush the top side with butter, flip, and cook for another 1-2 minutes. Transfer to a plate.
  5. In an 8-inch or 10-inch cast iron skillet, evenly spread the semi-sweet and milk chocolate chips in a single layer.
  6. Sprinkle the mini marshmallows over the chocolate chips, covering them completely.
  7. Place the skillet in the preheated oven and bake for 8-12 minutes, until the marshmallows are puffed and golden brown and the chocolate is melted and bubbly.
  8. Carefully remove the skillet from the oven. Sprinkle with a pinch of flaky sea salt if desired. Serve immediately with the grilled brioche.

Notes

For best results, use fresh brioche and high-quality chocolate chips. If marshmallows brown too quickly, tent the skillet with foil. The dip is best served immediately. Leftovers can be stored in the refrigerator for up to 2 days and reheated in a 300°F oven for 5-8 minutes.
