  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream (for spiderweb design)
  • 34 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 large bag tortilla chips (for serving)
  • Celery sticks (optional, for serving)
  • Carrot sticks (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. If using rotisserie chicken, remove skin and bones, then shred meat with two forks. If cooking your own, poach 3 boneless skinless chicken breasts in salted water until cooked through (15-18 minutes), then shred.
  3. In a large mixing bowl, beat softened cream cheese until smooth and fluffy (1-2 minutes).
  4. Add buffalo sauce, ranch dressing, and garlic powder; mix until well combined.
  5. Fold in shredded chicken, 1 cup shredded cheddar cheese, and sliced green onions. Season with a pinch of salt and black pepper.
  6. Transfer mixture to a 9-inch pie dish or small baking dish and spread into an even layer.
  7. Sprinkle remaining 1/2 cup cheddar cheese and Monterey Jack cheese evenly over the top.
  8. For spiderweb design: Spoon sour cream into a piping bag or zip-top bag with a tiny corner snipped off. Pipe concentric circles starting from the center. Use a toothpick to drag lines from center outward, then from outer edge back toward center, slightly offset, to create web pattern.
  9. Bake for 20-25 minutes until hot and bubbly, and cheese is melted and lightly golden. Optionally, broil for 1-2 minutes for a browner top.
  10. Let rest for 5 minutes before serving. Garnish with additional sliced green onions. Serve warm with tortilla chips, celery sticks, and carrot sticks.

For best results, soften cream cheese to room temperature. Shred your own cheese for smoother melting. Adjust heat level by varying buffalo sauce amount. Make spiderweb design just before baking to prevent sour cream from sinking. Leftovers can be stored in the refrigerator for up to 4 days.
