  • 1 medium zucchini, grated (about 1 cup)
  • 1 medium carrot, grated (about 1/2 cup)
  • 1/2 cup finely chopped spinach (fresh or frozen, thawed)
  • 1/3 cup plain breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil (for cooking)
  • Your favorite marinara sauce (about 2 cups, for serving)
  • Cooked pasta, zucchini noodles, or crusty bread (for serving)
  • Fresh basil or parsley for garnish

Instructions

  1. Prep the vegetables (5 minutes). Grate zucchini and carrot using the large holes of a box grater. If using fresh spinach, chop it finely. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  2. Blanch the veggies (3 minutes). Bring a small pot of water to a boil. Add the grated zucchini, carrot, and chopped spinach for exactly 60 seconds. Drain immediately and rinse with cold water. Squeeze again in your towel to remove any remaining moisture.
  3. Mix the meatball mixture (5 minutes). In a large bowl, combine the ground turkey, blanched and squeezed vegetables, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, oregano, basil, salt, pepper, and red pepper flakes if using. Use your hands to mix everything together until just combined. Do not overmix.
  4. Form the meatballs (5 minutes). Using a cookie scoop or your hands, form the mixture into 1.5-inch meatballs (about the size of a golf ball). You should get 20-24 meatballs. Place them on a plate or baking sheet.
  5. Cook the meatballs (12-15 minutes). Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully place the meatballs in the pan, leaving space between each one. Cook for 5-6 minutes without moving them, until the bottoms are golden brown. Gently turn each meatball and cook for another 5-6 minutes on the other side. The meatballs should be cooked through (internal temperature of 165ยฐF / 74ยฐC).
  6. Finish in sauce (optional, 5 minutes). If serving with marinara, add your sauce to the pan after the meatballs are browned. Reduce heat to low, cover, and simmer for 5 minutes.
  7. Rest and serve (2 minutes). Let the meatballs rest for 2-3 minutes before serving. Garnish with fresh basil or parsley and serve immediately.

Don’t skip the vegetable squeezing step โ€“ it’s crucial for preventing soggy meatballs. Use a light touch when forming meatballs to keep them tender. Let the pan get hot before adding meatballs to prevent sticking. Don’t crowd the pan; work in batches if needed. Let meatballs rest before serving to redistribute juices.
