  • 2 tablespoons sweet potato puree
  • 3 tablespoons canned pumpkin puree (100% pure pumpkin)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon coconut sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small saucepan, whisk together the whole milk, sweet potato puree, and canned pumpkin puree. Heat over medium-low until gently warm, not boiling.
  2. Add the maple syrup, coconut sugar, pumpkin pie spice, vanilla extract, and a pinch of salt. Whisk until the sugar begins to dissolve.
  3. Bring the mixture to a gentle simmer (small bubbles around the edges) and cook for 3-4 minutes, whisking occasionally, until the flavors meld and the color deepens.
  4. Optional: Pour the warm creamer through a fine-mesh strainer into a glass jar to remove any lumps.
  5. Let the creamer cool in the jar for about 5 minutes at room temperature. It will thicken slightly as it cools.
  6. Screw the lid on tightly and shake well before using. Store in the refrigerator.

Notes

The creamer will be thinner when warm and thicken as it chills. If it seems thin after cooling, it will thicken in the fridge overnight. For a dairy-free version, use full-fat oat milk or canned coconut milk. For extra spice, add 1/4 teaspoon more pumpkin pie spice and a pinch of ginger or cardamom.
