  • 1 cup brown sugar, packed
  • 1 1/2 cups boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Melt the butter and pour it into an 8×8-inch baking dish, tilting to coat the bottom evenly. Set aside.
  2. In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until no lumps remain.
  3. Add the milk and vanilla extract to the dry ingredients. Whisk until smooth and pourable, like pancake batter. Do not overmix.
  4. Pour the batter gently over the melted butter in the baking dish. Do not stir.
  5. Sprinkle the pecan halves evenly over the batter. Do not stir.
  6. In a separate bowl, combine the packed brown sugar and boiling water. Stir until the brown sugar is completely dissolved.
  7. Slowly pour the brown sugar mixture evenly over the entire dish. Do not stir.
  8. Place the dish in the preheated oven and bake for 35-40 minutes, until the top is golden brown and the edges are bubbling. The center should be set but slightly jiggly.
  9. Remove from the oven and let it cool for at least 10 minutes before serving.

Notes

For a gluten-free version, use a 1:1 gluten-free baking flour blend. For a lower sugar option, reduce brown sugar to 3/4 cup. If the top is browning too quickly, tent with foil during the last 10 minutes. Let the cobbler rest for 10 minutes after baking to allow the sauce to thicken.
