These boozy cherry bomb popsicles are a perfect adult frozen treat combining sweet-tart cherry flavor with a warm kick of cherry liqueur. Easy to make and ideal for summer gatherings.

  • 2 cups (300g) fresh or frozen pitted cherries
  • 1/2 cup (120ml) cherry liqueur (e.g., Luxardo Maraschino)
  • 2 tablespoons (30ml) fresh lemon juice
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (120ml) water
  • 1 teaspoon (5ml) vanilla extract (optional)
  • Fresh mint leaves (optional, for garnish or blending)

Instructions

  1. Prepare the simple syrup: In a small saucepan, combine granulated sugar and water. Heat gently over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool to room temperature.
  2. Puree the cherries: Place pitted cherries in a blender or food processor and blend until smooth. For a silkier texture, strain through a fine mesh sieve to remove skins and bits.
  3. Mix the base: In a large bowl, combine cherry puree, cooled simple syrup, cherry liqueur, fresh lemon juice, and vanilla extract if using. Stir well and adjust sweetness or tartness as needed.
  4. Fill the popsicle molds: Pour the mixture into popsicle molds, leaving space at the top for expansion. Optionally, add a fresh mint leaf into each mold.
  5. Insert sticks and freeze: Place sticks in molds and freeze for at least 6 hours or overnight until solid.
  6. Unmold and serve: Run warm water briefly over the outside of molds to release popsicles. Gently pull on sticks and enjoy.

Notes

Keep alcohol content around 15-20% of total liquid to ensure popsicles freeze properly. Use simple syrup instead of granulated sugar alone for smoother texture. Freeze slowly by wrapping molds in a towel if popsicles become too hard. Let popsicles sit at room temperature for a minute before unmolding to avoid breakage. For less icy texture, add a tablespoon of corn syrup or honey.
