Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center.
  2. Peel, core, and slice the apples into 1/4-inch thick slices (about 6 cups). Place in a large mixing bowl.
  3. Add granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch to the apples. Toss gently until every slice is coated. Set aside.
  4. Cut the 1/2 cup unsalted butter into pieces and place in a skillet over medium heat. Stir constantly until the butter melts, foams, and turns golden-amber with a nutty aroma (about 5-7 minutes). Immediately pour into a heat-safe bowl to stop cooking.
  5. In a medium bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon. Stir with a fork. Pour the warm brown butter over the dry ingredients and mix until it looks like wet sand and clumps together.
  6. Pour the apple mixture into a greased 9×13-inch baking dish and spread evenly. Sprinkle the oat crumble over the top in an even layer, patting gently.
  7. Place the dish on a baking sheet and bake for 40-45 minutes, until the filling is bubbly and the topping is golden brown. If the topping browns too fast, tent with foil after 30 minutes.
  8. Cool for at least 15 minutes before serving. The filling will thicken as it sets.
