A nostalgic, chewy oatmeal bar recipe that balances health and indulgence. Packed with fiber from oats and flaxseed, these bars are easy to make, perfect for meal prep, and deliver a comforting texture with dark chocolate and walnuts.

  • 2 cups (180g) Old-Fashioned Rolled Oats
  • 1 cup (120g) Whole Wheat Flour
  • ½ cup (50g) Almond Flour
  • ¼ cup (25g) Ground Flaxseed Meal
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • ½ cup (115g) Unsalted Butter, softened
  • ¾ cup (150g) Light Brown Sugar
  • ⅓ cup (120g) Honey
  • 1 large Egg, room temperature
  • 1 tsp Vanilla Extract
  • 1 cup (170g) Dark Chocolate Chips
  • ½ cup (60g) Chopped Walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the rolled oats, whole wheat flour, almond flour, ground flaxseed meal, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate medium bowl, use a hand mixer to beat the softened butter, brown sugar, and honey until light and fluffy (about 2-3 minutes).
  4. Add the room temperature egg and vanilla extract to the butter mixture. Beat on low speed until just combined.
  5. Add the dry ingredients to the wet ingredients. Mix on low speed or use a spatula until the dough comes together. It should be thick and slightly sticky.
  6. Gently fold in the dark chocolate chips and chopped walnuts (if using).
  7. Transfer the dough to the prepared pan. Press firmly and evenly into the pan using your hands or the bottom of a measuring cup.
  8. Bake for 25-30 minutes, until edges are golden brown and the center looks slightly underbaked.
  9. Let the bars cool completely in the pan on a wire rack for at least 30 minutes before cutting.

Notes

Do not use instant oats as they make the bars mushy. Ensure butter is softened, not melted, for the best texture. Press the dough firmly into the pan to prevent crumbling. Cool completely before cutting to allow the bars to set. For gluten-free, use certified GF oats and a 1:1 GF flour blend. For vegan, use vegan butter and a flax egg.
