This easy cinnamon roll casserole is a Christmas morning miracle—soft, custard-like, and topped with a caramelized crust. It turns skeptics into believers and makes holiday mornings feel like a movie scene.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 1 cup heavy cream
  • 4 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar, packed
  • A pinch of salt
  • Optional: 1/2 cup chopped pecans or walnuts, 1/4 cup raisins, or a handful of chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Generously butter a 9×13-inch baking dish.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each cinnamon roll into 4 pieces using a sharp knife or kitchen shears.
  3. Scatter the cinnamon roll pieces evenly in the prepared baking dish, spreading them out as much as possible.
  4. In a large mixing bowl, whisk together the heavy cream, eggs, vanilla extract, and a pinch of salt until smooth and pale yellow (about 30 seconds).
  5. Pour the custard mixture evenly over the cinnamon roll pieces. Gently press down with a spatula to help absorption. Let sit for 5 minutes.
  6. In a small bowl, mix the melted butter with the brown sugar and ground cinnamon to form a paste. Drizzle this mixture over the top of the casserole.
  7. Bake for 30-35 minutes, or until golden brown and puffed. The center should be set but slightly jiggly. If browning too quickly, tent with foil for the last 10 minutes.
  8. Remove from the oven and let cool for 5-10 minutes to allow the custard to set.
  9. Microwave the reserved icing packets for 10-15 seconds to loosen. Drizzle the icing over the warm casserole and spread evenly.
  10. Serve warm, scooping portions with a spatula to include the crispy edges.

Notes

Don’t over-soak the rolls—5 minutes is plenty. Use room temperature eggs for a smoother custard. Let the casserole rest before serving to avoid a soupy mess. For a make-ahead option, assemble the night before, refrigerate, and add 5-10 minutes to baking time.
