Ingredients

Scale
  • 2 cups (250 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • ½ cup (110 g) brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ⅓ cup (80 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups shredded zucchini (about 2 medium zucchinis), squeezed dry
  • 1 cup (120 g) chopped walnuts, lightly toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan and set aside.
  2. Shred the zucchini using a box grater or food processor. Place shredded zucchini in a clean kitchen towel and gently squeeze out excess moisture.
  3. Toast the walnuts on a baking sheet in the oven for 5–7 minutes until fragrant. Let cool.
  4. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and cinnamon.
  5. In a separate bowl, whisk the vegetable oil, eggs, and vanilla extract. Stir in the shredded zucchini.
  6. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix.
  7. Fold in the toasted walnuts, reserving a few for topping if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle reserved walnuts evenly over the surface.
  9. Bake for 55–65 minutes, starting to check at 55 minutes by inserting a toothpick into the center. It should come out mostly clean with a few moist crumbs.
  10. Let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze out excess moisture from shredded zucchini to prevent sogginess. Toast walnuts to enhance flavor. Avoid overmixing the batter to keep the bread tender. Use room temperature eggs for better mixing. Adjust baking time based on your oven and use the toothpick test to check doneness.
