Instructions

  1. Cook the rice first. Youโ€™ll need about 1 cup of cooked rice. I like to use leftover rice from the night before, or you can cook a fresh batch. If cooking fresh, use โ…“ cup dry rice and โ…” cup water. Bring to a boil, then simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside to cool slightly. Pro tip: Slightly undercook the rice by a minute or twoโ€”it will finish cooking when you reheat the burrito.
  2. Cook the turkey. Heat the olive oil in your large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until itโ€™s browned and no longer pink. This takes about 6-8 minutes. Donโ€™t rush this stepโ€”good browning means more flavor.
  3. Add the aromatics. Reduce the heat to medium. Add the diced onion and cook for 3-4 minutes, until itโ€™s soft and translucent. Stir in the minced garlic and cook for another 30 seconds, until fragrant. Your kitchen should smell amazing at this point.
