  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained (or 1.5 cups frozen corn)
  • 4 cups low-sodium beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Shredded cheddar or Mexican blend cheese (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Crushed tortilla chips (for topping)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Fresh lime wedges (for topping)
  • Diced red onion (for topping)

Instructions

  1. Place a large pot over medium-high heat and add olive oil. Once shimmering, add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes).
  3. Sprinkle taco seasoning, chili powder, and cumin over the beef. Stir to coat and cook for 1 minute to bloom the spices.
  4. Pour in the undrained diced tomatoes with green chiles, drained black beans, drained kidney beans, and drained corn. Stir to combine.
  5. Add beef broth and stir, scraping the bottom of the pot to release any browned bits.
  6. Bring the soup to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes.
  7. Taste and adjust seasoning with salt, black pepper, or additional heat as desired.
  8. While soup simmers, prepare the toppings bar: place shredded cheese, sour cream, crushed tortilla chips, cilantro, avocado, lime wedges, red onion, and jalapeños in separate small bowls.

Notes

For a thicker soup, mash some beans against the pot or use a cornstarch slurry. This soup freezes well for up to 3 months. For a vegetarian version, swap beef for an extra can of black beans and use vegetable broth.
