A warm, spiced coffee with a Halloween twist, perfect for cozy October evenings or festive gatherings. This DIY coffee bar lets everyone customize their own brew with toppings like caramel, chocolate, and whipped cream.

  • 8 cups strong brewed coffee (dark roast recommended)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 vanilla bean, split and scraped, or 2 teaspoons vanilla extract
  • 1 cup heavy cream or half-and-half
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate syrup
  • Whipped cream (canned or homemade)
  • Cinnamon sticks, for stirring
  • Star anise, for garnish (optional)
  • Edible glitter or sanding sugar in Halloween colors (orange, purple, black)
  • Chocolate shavings or cocoa powder for dusting
  • Pumpkin spice creamer (optional)
  • Peppermint extract (optional)
  • Bourbon or dark rum (optional, for adult version)
  • Mini marshmallows (optional)

Instructions

  1. Brew 8 cups of strong coffee using about 10 tablespoons of ground coffee.
  2. In a small bowl, combine brown sugar, granulated sugar, pumpkin pie spice, cinnamon, nutmeg, cloves, and ginger. Whisk until evenly mixed.
  3. Pour the brewed coffee into a large pot or slow cooker. Add the spice-sugar mixture and vanilla bean seeds (or extract). Stir well until sugars are completely dissolved.
  4. Keep the coffee warm on the lowest heat setting or in a slow cooker on ‘warm’. Do not let it boil.
  5. Prepare the toppings bar: Pour heavy cream into a small pitcher. Place caramel sauce and chocolate syrup in separate small bowls or squeeze bottles. Whip cream if making from scratch.
  6. Ladle the spiced coffee into mugs, leaving room for toppings. Let everyone customize their own brew with cream, caramel, chocolate syrup, whipped cream, and garnishes. Add a cinnamon stick for stirring and a star anise for garnish.

Notes

For best flavor, use freshly brewed coffee and do not boil. Toast whole spices for deeper flavor. Make a simple syrup by dissolving sugars and spices in 1/2 cup hot water to avoid graininess. For a dairy-free version, use coconut cream or oat milk. Leftovers can be stored in the fridge for up to 3 days and reheated gently.
