A warm, creamy, and spicy pumpkin chai latte made with real pumpkin puree, freshly steeped chai, and velvety oat milk. This quick and easy recipe brings coffee shop flavor home in under 10 minutes.

  • 2 chai tea bags
  • 1/2 cup (120ml) water
  • 12 tablespoons (15-30ml) maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • Pinch of black pepper
  • 1 cup (240ml) oat milk (barista edition recommended)
  • Optional: coconut whipped cream or cinnamon for topping

Instructions

  1. Steep the chai tea: In a small saucepan, bring 1/2 cup (120ml) of water to a gentle boil. Remove from heat and add 2 chai tea bags. Let steep for exactly 5 minutes.
  2. Whisk in the pumpkin and spices: Remove tea bags, squeezing gently. Add pumpkin puree, pumpkin pie spice, cinnamon, black pepper, and vanilla extract. Whisk vigorously until smooth.
  3. Sweeten to taste: Add 1 tablespoon of maple syrup and stir. Taste and adjust sweetness as desired.
  4. Heat the oat milk: Pour oat milk into the same saucepan with the pumpkin chai mixture. Heat over medium-low until steaming and tiny bubbles form around the edges (about 3-4 minutes). Do not let it boil.
  5. Froth the milk: Pour the latte into a mug, leaving about an inch of space. Use a milk frother to foam the top for 15-20 seconds. Alternatively, pour into a jar, shake vigorously for 30 seconds, then pour back into the mug, spooning foam on top.
  6. Finish and serve: Sprinkle cinnamon or pumpkin pie spice on top. Add coconut whipped cream if desired. Serve immediately.

Notes

Don’t skip the black pepper—it enhances the spices without adding heat. For best results, steep chai in water only before adding milk. Oat milk should not boil to prevent separation. Make a double batch of the pumpkin chai concentrate (pumpkin, spices, maple syrup, vanilla) and store in the fridge for up to 5 days for quicker preparation.
