Cozy Honey Apple Cake with Easy Cinnamon Streusel

A tender, moist apple cake sweetened with honey and topped with a buttery cinnamon streusel. Perfect for breakfast, dessert, or a cozy snack any time of day.

  • 2 medium apples (about 300g), peeled and grated (Honeycrisp or Granny Smith recommended)
  • ½ cup (170g) honey
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg (freshly grated if possible)
  • ¼ cup (60g) plain Greek yogurt (full-fat recommended)
  • For the streusel:
  • ½ cup (60g) all-purpose flour
  • ¼ cup (50g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 3 tablespoons (42g) unsalted butter, cold and cut into small cubes
  • ¼ cup (30g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Make the streusel: In a medium bowl, whisk together flour, brown sugar, and cinnamon. Add cold butter cubes and work into the flour mixture with fingertips or a pastry cutter until coarse sand with some pea-sized butter pieces remains. Stir in nuts if using. Refrigerate while making batter.
  3. Peel and core apples, then grate on the large holes of a box grater. Do not squeeze out juice. Set aside.
  4. In a large bowl, whisk together melted butter, honey, eggs, vanilla extract, and Greek yogurt until smooth and glossy.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Add dry ingredients to wet ingredients and stir with a rubber spatula until just combined (a few streaks of flour are okay). Gently fold in grated apples. Batter should be thick but not stiff; if too dry, add a tablespoon of milk or water.
  7. Pour batter into prepared pan and spread evenly. Sprinkle cold streusel over the top, covering completely. Do not press into batter.
  8. Bake for 40-45 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If streusel browns too quickly after 30 minutes, tent loosely with foil.
  9. Cool in pan for 15 minutes, then run a knife around edges and invert onto a cooling rack. Remove parchment, flip right-side up, and cool completely.

Notes

Don’t overmix the batter. Use room-temperature eggs. Check baking soda freshness. Let cake cool completely before slicing. Toast nuts for streusel for extra flavor. Cake tastes even better on day two.
