These cozy hot honey cranberry baked brie bites in puff pastry are the perfect holiday appetizer—flaky, creamy, tangy, and sweet with a subtle kick of heat. Ready in about 30 minutes, they’re a crowd-pleaser that looks impressive but is surprisingly simple to make.

Ingredients

Scale
  • 1 package puff pastry sheets, thawed
  • 8 ounces brie cheese, cold
  • 1 cup fresh or frozen cranberries
  • 1/4 cup hot honey, plus more for drizzling
  • 2 tablespoons orange juice, fresh squeezed if possible
  • 1 teaspoon orange zest
  • 1/2 teaspoon vanilla extract
  • 1 pinch kosher salt
  • 1 large egg, beaten with a splash of water (for egg wash)
  • Fresh rosemary or thyme for garnish (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a mini muffin tin.
  2. Make the hot honey cranberry compote: In a small saucepan over medium heat, combine cranberries, hot honey, orange juice, orange zest, vanilla extract, and kosher salt. Stir and bring to a gentle simmer. Cook for 8-10 minutes, stirring occasionally, until cranberries have broken down and mixture has thickened to a jam-like consistency. Remove from heat and let cool slightly.
  3. Prepare the puff pastry: On a lightly floured surface, unfold the thawed puff pastry sheets. Cut each sheet into 9 equal squares (about 3 inches each) using a sharp knife or pizza cutter. You should have 18 squares total.
  4. Cut the brie: Cut the cold brie into small cubes, about 1/2 inch each. Trim off the rind if desired.
  5. Assemble the bites: Gently press each puff pastry square into the cups of a mini muffin tin, or place them on the prepared baking sheet and pinch the corners together to create a cup shape. Place 1-2 cubes of brie in the center of each pastry square, then spoon about 1 teaspoon of cranberry compote on top.
  6. Brush with egg wash: In a small bowl, beat the egg with a splash of water. Using a pastry brush, gently brush the edges of each pastry square with the egg wash.
  7. Bake: Place the baking sheet or muffin tin in the preheated oven and bake for 12-15 minutes, or until the pastry is puffed and golden brown and the brie is bubbly.
  8. Cool and garnish: Let the bites cool on the baking sheet for 2-3 minutes before transferring to a serving platter. Drizzle with extra hot honey, sprinkle with flaky sea salt, and garnish with fresh rosemary or thyme if desired.

Notes

Keep puff pastry cold for best results. Cranberry compote can be made up to a week ahead. Assemble bites (without egg wash) and freeze for up to 3 months; bake from frozen, adding 3-5 minutes. For a gluten-free version, use gluten-free puff pastry. For dairy-free, substitute brie with dairy-free brie or soft cashew cheese.
