  • ¼ cup heavy cream (60ml)
  • 1½ tablespoons white miso paste
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 6 medium apples (about 2 pounds / 900g), a mix of tart and sweet (e.g., 3 Granny Smith and 3 Honeycrisp)
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour (16g)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup all-purpose flour (95g)
  • ¾ cup rolled oats (70g)
  • ½ cup packed brown sugar (100g)
  • ½ teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter (85g), cut into small cubes
  • Pinch of sea salt
  • Vanilla ice cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven. Cut the butter for the topping into small cubes and keep it cold in the fridge.
  2. Make the miso caramel: In a medium saucepan over medium heat, melt 4 tablespoons of butter. Add the brown sugar and whisk until combined. Cook for about 2 minutes, whisking constantly, until bubbly and smooth. Slowly pour in the heavy cream while whisking (it will bubble up). Cook for another minute, then remove from heat. Whisk in the miso paste and vanilla extract until fully dissolved. Set aside to cool slightly.
  3. Prep the apples: Peel, core, and slice the apples into ¼-inch thick slices. Toss them in a large bowl with the lemon juice, 2 tablespoons of flour, cinnamon, and nutmeg until evenly coated.
  4. Make the crumble topping: In a medium bowl, whisk together the flour, oats, brown sugar, cinnamon, and salt. Add the cold butter cubes. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Refrigerate while assembling the crumble.
  5. Assemble the crumble: Spread the apple mixture evenly in an 8×8-inch baking dish. Pour the miso caramel over the apples (do not stir). Sprinkle the crumble topping evenly over the apples and caramel.
  6. Bake the crumble: Place the dish on a baking sheet. Bake for 35-40 minutes, until the topping is golden brown and the filling is bubbly around the edges. If the topping browns too quickly after 25 minutes, tent loosely with foil. The crumble is done when the apples are tender.
  7. Cool and serve: Let the crumble cool on a wire rack for at least 15 minutes. Serve warm with a generous scoop of vanilla ice cream.

Notes

Don’t overheat the miso; add it after removing the caramel from heat. Keep butter cold for the topping. Use a mix of apples for best texture. Let the crumble rest for 15 minutes before serving. Make the caramel ahead of time (up to 3 days). Always place a baking sheet under the dish to catch drips.
