  • ⅓ cup (65g) granulated sugar
  • 2 tablespoons (25g) packed light brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup (120g) pumpkin puree
  • 1 large egg, room temperature
  • 3 tablespoons (42g) unsalted butter, melted and slightly cooled
  • 2 tablespoons (30ml) whole milk
  • ½ teaspoon vanilla extract
  • Turbinado sugar or cinnamon-sugar mixture for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line 6 cups of your muffin tin with paper liners.
  2. In a medium bowl, whisk together the dry ingredients: ¾ cup all-purpose flour, ⅓ cup granulated sugar, 2 tablespoons packed brown sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, 1½ teaspoons pumpkin pie spice, ½ teaspoon cinnamon, and ¼ teaspoon salt.
  3. In a small bowl, combine the wet ingredients: ½ cup pumpkin puree, 1 large egg, 3 tablespoons melted butter, 2 tablespoons milk, and ½ teaspoon vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until just combined. A few lumps are fine.
  5. Let the batter rest for 5 minutes.
  6. Scoop the batter into the prepared muffin cups, filling each about three-quarters full.
  7. Sprinkle the tops with your chosen topping (turbinado sugar or cinnamon-sugar mixture).
  8. Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack.
