  • 2 tablespoons peanut butter (creamy or chunky)
  • 1 tablespoon maple syrup or honey (optional)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon

Instructions

  1. Mash 1 large ripe banana in a mixing bowl using a fork or potato masher until mostly smooth with a few small lumps remain (about 1-2 minutes).
  2. Add ½ cup (120ml) milk of choice, ¼ cup (60g) Greek yogurt, 1 tablespoon maple syrup (if using), and ½ teaspoon vanilla extract to the mashed banana. Stir gently until well incorporated (about 1 minute).
  3. Stir in ½ cup (45g) rolled oats, 1 tablespoon chia seeds, ¼ teaspoon cinnamon, and a pinch of salt until all oats are coated and mixture is evenly combined.
  4. Pour the mixture into a mason jar or airtight container and seal tightly.
  5. Refrigerate for at least 6 hours or overnight to allow oats and chia seeds to soften and thicken.
  6. Before serving, gently warm 2 tablespoons peanut butter in the microwave for 15-20 seconds and stir to smooth out lumps.
  7. Give the oats a quick stir if needed, then drizzle the warmed peanut butter over the top. Optionally garnish with sliced banana, chopped nuts, or a sprinkle of cinnamon.
