  • 1 cup shredded sharp cheddar cheese (about 110g)
  • 1/2 cup shredded mozzarella cheese (about 55g)
  • 1 tablespoon ranch dressing mix or 2 tablespoons ranch dressing
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 6 cups red and blue corn tortilla chips (about 180g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese and Greek yogurt. Blend until smooth and creamy using an electric mixer or sturdy spoon (about 2-3 minutes).
  3. Add buffalo sauce, ranch dressing mix, garlic powder, and onion powder to the bowl. Mix thoroughly until evenly distributed (about 1-2 minutes).
  4. Stir in shredded chicken, cheddar cheese, and mozzarella cheese until well incorporated.
  5. Season with salt and pepper to taste, starting with 1/4 teaspoon salt and a few cracks of black pepper.
  6. Transfer the mixture into a 9×9 inch (23×23 cm) baking dish, spreading evenly to about 1 to 1.5 inches thick.
  7. Bake for 20-25 minutes until bubbly and golden on top, checking at 18 minutes if your oven runs hot.
  8. Remove from oven and let rest for 5 minutes to thicken.
  9. Serve warm with crispy red and blue tortilla chips arranged around the dish.

Use softened cream cheese to avoid lumps. Rotisserie chicken is recommended for ease. Greek yogurt lightens the dip without losing creaminess but can be substituted with sour cream.
