  • 8 ounces cream cheese, softened and cubed
  • 12 ounces beer (lager or pilsner, such as Miller High Life, Coors Banquet, or Yuengling)
  • ½ cup whole milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dry mustard powder
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon paprika, plus more for garnish

Instructions

  1. Shred your cheese. Take the block of sharp cheddar and shred it on the large holes of your box grater to get about 4 cups of shredded cheese.
  2. Cube your cream cheese. Cut the softened cream cheese into about 8 to 10 cubes for faster melting.
  3. Combine everything in the crockpot. Add the shredded cheddar, cubed cream cheese, beer, milk, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, dry mustard, salt, and paprika. Give it a quick stir to distribute everything.
  4. Cook on low for 1.5 to 2 hours. Set your crockpot to low and put the lid on. Resist the urge to peek for at least the first hour.
  5. Stir after 1.5 hours. After 90 minutes, give the dip a good stir. It should be mostly melted with a few stubborn chunks. If still lumpy, cook another 20 to 30 minutes.
  6. Whisk until smooth. Once fully melted, whisk vigorously until completely smooth and uniform. If too thick, stir in an extra tablespoon or two of milk.
  7. Keep warm on the ‘warm’ setting. Switch your crockpot to warm. The dip will stay perfect for about 2 to 3 hours. If it thickens, stir in a splash of milk.
  8. Garnish and serve. Right before serving, sprinkle extra paprika on top for color. Serve with soft pretzels, pretzel bites, crusty bread, apple slices, or vegetables.

Notes

Shred your own cheese for best melting. Use a light lager or pilsner; avoid IPAs. Let cream cheese come to room temperature. Cook on low only. If dip separates, whisk in a tablespoon of warm milk. Dip tastes even better the next day. Store leftovers in the refrigerator for up to 4 days.
