Creamy Crockpot Buffalo Chicken Dip Stuffed Bread Bowl

A rich, tangy, spicy buffalo chicken dip served inside a crusty bread bowl. The slow cooker does all the work, making this an easy and impressive party appetizer that’s perfect for game days, potlucks, or any gathering.

  • 2 pounds boneless, skinless chicken breasts (about 34 medium breasts)
  • 16 ounces cream cheese, softened and cubed (two 8-ounce blocks)
  • 1 cup buffalo wing sauce (like Frank’s RedHot Original)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup ranch dressing
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1/2 cup crumbled blue cheese (optional)
  • 2 tablespoons unsalted butter
  • 1 large round loaf of bread (sourdough, Italian, or French boule)
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder
  • Extra bread chunks (the inside of the loaf you scoop out)
  • Celery sticks and carrot sticks
  • Tortilla chips or pita chips
  • Fresh chopped parsley or green onions for garnish

Instructions

  1. Place the 2 pounds of boneless, skinless chicken breasts in the bottom of your slow cooker. Add the 1 cup of buffalo wing sauce and 2 tablespoons of unsalted butter. Cover and cook on HIGH for 1.5 to 2 hours, or on LOW for 3 to 4 hours, until the chicken shreds easily with a fork and reaches an internal temperature of 165°F.
  2. Carefully remove the cooked chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir it into the remaining buffalo sauce mixture.
  3. Add the 16 ounces of softened, cubed cream cheese to the slow cooker. Stir gently to combine. Then add the 1 cup of shredded sharp cheddar cheese, 1/2 cup of ranch dressing, and 1 packet of ranch seasoning mix. Stir everything together until the cream cheese is fully melted and the mixture is smooth and creamy, about 5 to 7 minutes on HIGH or 10 to 15 minutes on LOW. If using, stir in the optional 1/2 cup of crumbled blue cheese.
  4. Preheat your oven to 350°F (175°C). Take your large round loaf of bread and use a sharp chef’s knife to cut a circle into the top, about 1 inch from the edge. Carefully remove the top ‘lid’ and set it aside. Using your hands or a spoon, scoop out the soft bread from the inside of the loaf, leaving a 1-inch thick wall all around. Tear the removed bread into bite-sized chunks and place them on a baking sheet.
  5. In a small bowl, mix 2 tablespoons of melted butter with 1/2 teaspoon of garlic powder. Brush this mixture all over the inside of the bread bowl and the underside of the bread lid. Place the hollowed bread bowl and the lid on a baking sheet and bake for 10 minutes, just until the inside is lightly toasted.
  6. Remove the bread bowl from the oven. Carefully ladle or spoon the hot buffalo chicken dip into the hollowed bread bowl, filling it right to the top. Place the bread lid on top of the dip (or alongside it on the baking sheet). Place the baking sheet back in the oven and bake for 15 to 20 minutes, until the dip is bubbly and the bread bowl is golden brown and crispy on the outside.
  7. Remove the bread bowl from the oven and let it cool for 5 minutes. Place the stuffed bread bowl on a large serving platter or cutting board. Arrange the reserved bread chunks, celery sticks, carrot sticks, and tortilla chips around it. Garnish with fresh chopped parsley or green onions. Serve immediately while the dip is still hot and bubbly.

Notes

For best results, use full-fat cream cheese and freshly shredded cheddar. Toast the bread bowl thoroughly to prevent sogginess. The dip can be made up to 2 days in advance and reheated. Leftover dip (without bread) can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
