  • 1.5 lbs boneless, skinless chicken breasts (about 2–3 large)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cans (15 oz each) white beans (Great Northern or cannellini), drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 4 oz cream cheese, softened and cut into cubes
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Optional garnishes: fresh cilantro, diced avocado, shredded Monterey Jack cheese, lime juice, crispy tortilla strips or crushed tortilla chips

Instructions

  1. Trim any visible fat from the chicken breasts and place them in the bottom of a 6-quart crockpot.
  2. In a medium bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour over the chicken.
  3. Add the drained and rinsed white beans and the entire can of diced green chiles (with juice) to the crockpot. Stir gently to combine.
  4. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until the chicken is cooked through and shreds easily.
  5. Remove the chicken from the crockpot and shred with two forks on a cutting board.
  6. Add the softened cream cheese cubes to the liquid in the crockpot and stir until completely melted and smooth.
  7. Return the shredded chicken to the crockpot and stir to combine. Season with salt and pepper to taste.
  8. Serve hot with desired garnishes.

Notes

For best results, use full-fat cream cheese for the creamiest texture. Resist the urge to lift the lid during cooking. The chili tastes even better the next day as flavors meld. To thicken, mash some beans against the side of the crockpot or cook with lid off for 15-20 minutes.
