Creamy One Pot Cheeseburger Potato Soup – Easy 30-Minute Recipe

A quick and comforting soup that tastes like a cheeseburger in a bowl, made in one pot with ground beef, potatoes, and sharp cheddar cheese. Perfect for cold nights and ready in just 30 minutes.

  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth (or beef broth)
  • 4 cups Yukon Gold potatoes, peeled and diced into ½-inch cubes
  • 1 cup whole milk (or 2%)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Optional: ¼ teaspoon red pepper flakes
  • Optional toppings: chopped fresh parsley, extra shredded cheddar cheese, crumbled cooked bacon, diced pickles, or a drizzle of ketchup

Instructions

  1. Brown the Beef: Place a large pot over medium-high heat and add olive oil. Once shimmering, add ground beef and break it up with a wooden spoon. Cook until nicely browned, about 5-7 minutes. Leave about a tablespoon of fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add the Broth and Potatoes: Pour in chicken broth and scrape up any browned bits from the bottom of the pot. Add diced potatoes, salt, pepper, smoked paprika, garlic powder, and onion powder. Stir, bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until potatoes are fork-tender.
  4. Stir in the Dairy: Remove pot from heat. Stir in whole milk and heavy cream until smooth and creamy.
  5. Melt in the Cheese: Gradually add shredded cheddar cheese, a handful at a time, stirring constantly until completely melted and the soup is velvety. Adjust salt and pepper to taste.
  6. Finish and Serve: Let soup sit off heat for about 5 minutes to thicken slightly. Ladle into bowls and top with desired toppings. Serve immediately.

Notes

For best results, shred your own cheese from a block to avoid anti-caking agents that can cause graininess. Always remove the pot from heat before adding dairy to prevent curdling. If soup thickens too much after sitting, stir in a splash of milk or broth. For a freezer-friendly version, freeze before adding milk, cream, and cheese, then add them when reheating.
