Creamy Overnight Peanut Butter Banana Oats

A quick, 5-minute prep breakfast that delivers creamy, naturally sweet overnight oats with peanut butter and banana. Perfect for busy mornings, meal prep, or when you need a grab-and-go breakfast that tastes like you actually planned it.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (whole milk recommended)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash the ripe banana in your jar or a small bowl with a fork until mostly smooth with a few tiny lumps.
  2. Add 2 tablespoons of creamy peanut butter on top of the mashed banana. If thick, microwave for 10 seconds to loosen.
  3. Pour in 1/2 cup of milk and stir with a fork to combine the banana, peanut butter, and milk.
  4. Add the Greek yogurt and vanilla extract, stirring until fully incorporated and smooth.
  5. Mix in the rolled oats, chia seeds (if using), a pinch of salt, and honey or maple syrup. Stir thoroughly, ensuring no dry oats remain at the bottom. Scrape sides with a spatula.
  6. Taste and adjust sweetness or salt as needed.
  7. Seal the jar with a lid and refrigerate for at least 6 hours, ideally 8-12 hours overnight.
  8. In the morning, stir well. If too thick, add a tablespoon or two of milk to loosen. Top with sliced banana, a drizzle of peanut butter, granola, or chocolate chips if desired.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. The riper the banana, the sweeter the oats. Chia seeds are optional but add thickness and nutrition. For best texture, refrigerate at least 6 hours. Store in fridge for up to 4 days. Do not freeze.
