  • 1 ripe banana, mashed
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon creamy peanut butter (reserved for topping)

Instructions

  1. Mash the banana in a small mixing bowl until mostly smooth with a few tiny lumps.
  2. Add the mashed banana, milk, Greek yogurt, maple syrup, and vanilla extract. Whisk until well combined.
  3. Stir in the rolled oats, chia seeds, and salt until all oats are coated and submerged.
  4. Add 2 tablespoons of peanut butter and stir vigorously until fully incorporated.
  5. Divide the mixture evenly into two mason jars or containers, leaving about an inch of headspace.
  6. Dollop the remaining 1 tablespoon of peanut butter on top and gently swirl with a toothpick or knife.
  7. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, or chocolate chips. Serve cold or microwave for 30-45 seconds if desired.

Notes

Use rolled oats, not instant, for best texture. The oats are better on day two. For a thicker consistency, reduce milk by 2 tablespoons; for thinner, add 2 tablespoons more. Refrigerate within 20 minutes of mixing. Batch prep up to 5 days in advance.
