  • 1 scoop (about 30g) vanilla or unflavored protein powder (optional)
  • 1 to 2 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a mason jar or container, add 1 cup rolled oats, 1 tablespoon chia seeds (if using), and a pinch of salt. Stir to distribute evenly.
  2. Add the peanut butter: Spoon 2 tablespoons of peanut butter into the jar.
  3. Add the protein powder: If using, add 1 scoop of protein powder on top of the peanut butter. For lump-free results, mix the protein powder with a tablespoon of milk first to make a paste.
  4. Pour in the milk: Add 1 cup of milk slowly, then give the jar a gentle shake.
  5. Add the yogurt and sweetener: Spoon in 1/4 cup Greek yogurt and drizzle 1 to 2 tablespoons honey or maple syrup. Do not stir yet.
  6. Stir thoroughly: Use a spoon to mix everything together, scraping the bottom and corners, until the peanut butter is fully incorporated and no streaks remain. Stir for about 30 seconds.
  7. Taste and adjust: Dip a clean spoon in and taste the mixture. Adjust sweetness or peanut butter level if needed.
  8. Seal and refrigerate: Put the lid on tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  9. Serve cold or warm: In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for warm oats.

Notes

For best texture, use rolled oats (not instant or steel-cut). The protein powder is optional but recommended for a protein boost. If using a flavored protein powder, reduce the added sweetener. For a nut-free version, use sunflower seed butter or tahini. The oats keep in the fridge for up to 5 days; texture is best on days 1-3. Do not freeze.
