  • 4 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat dry chicken breasts and season generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
  3. Add chicken breasts and cook undisturbed for 5-6 minutes per side until golden brown and cooked through (internal temperature 165ยฐF/74ยฐC). Transfer to a plate and tent with foil.
  4. Lower heat to medium and add unsalted butter. Once melted, stir in minced garlic and sautรฉ for about 1 minute until fragrant but not browned.
  5. Add chopped sun-dried tomatoes and cook for 1-2 minutes to soften and release flavor.
  6. Pour in chicken broth, scraping the bottom of the pan with a wooden spoon to lift browned bits. Simmer for 2-3 minutes to reduce slightly.
  7. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Let sauce simmer gently for 3-4 minutes, stirring occasionally until thickened.
  8. Toss in fresh spinach and cook for 1-2 minutes until wilted. Add red pepper flakes if desired.
  9. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over the top, and simmer for another 2 minutes to meld flavors.
  10. Serve chicken with sauce spooned over. Pairs well with mashed potatoes, garlic bread, or pasta.

Do not overcrowd the pan to ensure proper browning. Pat chicken dry before seasoning. Use fresh garlic for best flavor. Control heat to avoid cream breaking. If sauce is too thin, add more Parmesan or simmer longer; if too thick, add a splash of chicken broth. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
