  • 1/2 cup hot sauce (Frank’s RedHot Original recommended)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional)
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks (optional)
  • Chopped green onions or fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 450ยฐF (230ยฐC). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the cauliflower head and pat it dry. Cut into bite-sized florets, about 1 to 1.5 inches each.
  3. In a large mixing bowl, whisk together the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the water and whisk until you have a smooth, thick batter (consistency of pancake batter).
  4. Add the cauliflower florets to the bowl with the batter and toss until every floret is evenly coated.
  5. Arrange the battered florets on the prepared baking sheet in a single layer, making sure they are not touching.
  6. Bake for 20 minutes, flipping each floret halfway through at the 10-minute mark.
  7. While the cauliflower bakes, combine the hot sauce, melted butter, and honey (if using) in a medium bowl. Whisk until smooth.
  8. Remove the florets from the oven and let them cool for about 2 minutes. Transfer them to a large bowl, pour the buffalo sauce over the top, and toss gently until every floret is coated.
  9. Return the sauced florets to the baking sheet (line with fresh parchment if needed) and bake for another 5-10 minutes until the sauce looks slightly tacky and the edges are darkening.
  10. Serve immediately, garnished with chopped green onions or parsley if desired, with ranch or blue cheese dressing and celery sticks on the side.

Notes

For the crispiest results, use a wire rack on the baking sheet. Don’t skip drying the cauliflower thoroughly before battering. Avoid overcrowding the baking sheet. Serve immediately for best texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven at 350ยฐF for 5-7 minutes or in an air fryer at 350ยฐF for 3-4 minutes. Freezing is not recommended.
