These crispy baked buffalo cauliflower bites are the ultimate game day snack. With a shatteringly crisp panko coating and tangy buffalo sauce, they disappear faster than wings.

  • 1 cup all-purpose flour
  • 1 cup milk (any kind works—dairy, almond, oat—unsweetened)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups panko breadcrumbs
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • ¼ cup unsalted butter, melted
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Worcestershire sauce
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks (optional)
  • Chopped green onions or fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper. Place a cooling rack on top if you have one.
  2. Wash the cauliflower and cut it into florets about 1 to 1½ inches wide. Pat them dry with a clean kitchen towel.
  3. In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth like a thin pancake batter.
  4. Add the florets to the batter and toss gently until every piece is evenly coated. Let any excess batter drip off.
  5. Place the panko in a shallow dish. Working in batches, roll each battered floret in the panko, pressing gently so the crumbs stick. Place on the prepared baking sheet in a single layer.
  6. Bake for 20 minutes, flipping each floret carefully with tongs after 10 minutes. They should be golden brown and starting to crisp.
  7. While the cauliflower bakes, combine the hot sauce, melted butter, honey, and Worcestershire sauce in a medium bowl. Whisk until smooth.
  8. Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the buffalo sauce over the top and toss gently until every piece is coated.
  9. Return the glazed florets to the baking sheet (use a fresh sheet of parchment if needed). Bake for another 5 to 7 minutes until sticky-crisp.
  10. Serve immediately, garnished with chopped green onions or parsley, with ranch or blue cheese dressing and celery sticks.

Notes

Don’t skip drying the cauliflower—excess moisture causes sogginess. Use panko, not regular breadcrumbs, for the crispiest texture. Do not overcrowd the baking sheet; use two sheets if needed. The final 5-7 minute bake after glazing is crucial for setting the sauce. For an air fryer version, after the initial bake, air fry at 400°F for 3-4 minutes after glazing. Can be breaded up to 2 hours ahead and refrigerated.
