Crispy Bavarian Pretzel Dogs with Spicy Mustard

A homemade twist on the classic hot dog, featuring chewy pretzel dough, premium franks, melted cheddar, and a homemade spicy mustard dipping sauce.

Ingredients

  • 3 to 3.5 cups (360-420g) all-purpose flour
  • 1 cup (240ml) warm water (105°F-115°F)
  • 2 teaspoons (7g) active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • 8 to 10 premium beef or turkey hot dogs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons everything bagel seasoning
  • 8 cups water (for boiling)
  • 6 tablespoons baking soda (for boiling)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 1 teaspoon honey
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon hot sauce
  • A pinch of smoked paprika

Instructions

  1. In a stand mixer bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, salt, and egg to the yeast mixture. Gradually add flour while mixing on low. Increase to medium speed and knead for 5-7 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and let rise in a warm place for 45-60 minutes until doubled in size.
  4. While dough rises, whisk together Dijon mustard, yellow mustard, honey, apple cider vinegar, hot sauce, and smoked paprika to make the spicy mustard.
  5. Punch down risen dough and divide into 8-10 equal pieces. Roll each into an 8×4 inch rectangle.
  6. Wrap each hot dog tightly in a dough rectangle, sealing the seam with water or egg wash. Pinch ends closed.
  7. Place wrapped dogs on a parchment-lined baking sheet. Cover loosely and let rise for 20-30 minutes. Preheat oven to 400°F (200°C) during the last 15 minutes.
  8. Bring a large pot of water to a boil. Add baking soda carefully. Boil pretzel dogs for 30 seconds on each side, then remove with a slotted spoon.
  9. Return boiled dogs to the baking sheet. Brush with remaining beaten egg and sprinkle with cheddar cheese and everything bagel seasoning.
  10. Bake for 15-18 minutes until deep golden brown and cheese is bubbly. Cool for 5 minutes before serving with spicy mustard.

Notes

Ensure water temperature is between 105°F and 115°F to activate yeast without killing it. Do not skip the boiling step with baking soda, as it creates the authentic pretzel crust and color. For best texture, serve immediately. Leftovers can be reheated in the oven at 350°F.
