  • 1 pound thinly sliced bacon (regular-cut, not thick-cut)
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon kosher salt (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the oven rack in the center.
  2. Line a rimmed baking sheet with parchment paper or aluminum foil. Place a wire rack on top.
  3. Wash the green beans and snap off the stem ends. Pat them completely dry with a paper towel.
  4. In a small bowl, mix the brown sugar and salt together with your fingers, breaking up any clumps.
  5. Cut each slice of bacon in half crosswise. Grab a small bundle of green beans (about 4-5 beans) and wrap one half-slice of bacon around the middle, slightly overlapping the ends. Place the bundle seam-side down on the wire rack.
  6. Repeat with the remaining beans and bacon, leaving a little space between each bundle on the rack.
  7. Sprinkle half of the brown sugar mixture generously over the tops of the bacon-wrapped bundles.
  8. Bake for 15 minutes. Remove from the oven and use tongs to carefully flip each bundle. Sprinkle the remaining brown sugar mixture over the other side.
  9. Bake for another 10-15 minutes, until the bacon is deep golden brown and crispy and the sugar is bubbly and set.
  10. Let the bundles rest on the wire rack for about 5 minutes before serving. The sugar will harden as it cools.

Notes

Pat the green beans completely dry to avoid steaming the bacon. Do not use thick-cut bacon; it won’t crisp up in time. Watch the sugar carefully to prevent burning; if it gets too dark, tent the pan loosely with foil. For best results, use fresh green beans, not frozen. The wire rack is essential for even crisping. Let the bundles cool for 5 minutes after baking to allow the sugar to harden.
