  • 1 cup fresh pumpkin seeds (about 4–5 ounces)
  • 1 tablespoon melted coconut oil or avocado oil
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ⅛ teaspoon ground nutmeg (optional)

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Rinse the pumpkin seeds thoroughly in a colander under cold water, removing stringy pulp.
  3. Pat the seeds dry with paper towels until they are mostly dry.
  4. In a medium bowl, combine the melted coconut oil, granulated sugar, ground cinnamon, salt, and nutmeg (if using). Stir until it forms a paste-like mixture.
  5. Add the dried pumpkin seeds to the bowl and toss well to coat every seed evenly.
  6. Transfer the coated seeds to the air fryer basket in a single layer. Do not overcrowd.
  7. Air fry at 320°F for 8 minutes. Shake the basket or stir the seeds.
  8. Continue air frying for another 4-6 minutes, checking at the 2-minute mark, until golden brown and fragrant.
  9. Remove the basket and let the seeds cool directly in the basket for 5 minutes.
  10. Transfer to a bowl or airtight container and let cool completely before storing.

Notes

For the crispiest seeds, dry them thoroughly before coating. Do not overcrowd the air fryer basket. Watch closely at the end to prevent sugar from burning. Seeds will continue to crisp as they cool. Store in an airtight container at room temperature for up to 2 weeks.
